  • Author: Chef Bella
  • Total Time: 1 hour 30 minutes
  • Yield: 30 cookies 1x

Description

White Chocolate Confetti Cookies are soft, chewy, and bursting with fun thanks to rainbow sprinkles and creamy white chocolate chips. Enhanced with instant pudding mix, these cookies stay tender for days and are perfect for celebrations or whenever you need a colorful pick-me-up.

Ingredients

Scale
  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 (3.4-ounce) box white chocolate instant pudding mix
  • 2 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 1 cup white chocolate chips
  • 1 cup rainbow sprinkles

Instructions

  1. Whisk Dry Ingredients: In a medium bowl, combine flour, baking soda, and baking powder.
  2. Cream Butter and Sugars: In a large bowl, beat softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy (3–5 minutes).
  3. Add Pudding and Eggs: Mix in the white chocolate pudding mix. Then add eggs and vanilla extract, mixing until just combined.
  4. Combine Mixtures: Gradually stir the dry ingredients into the wet ingredients until just incorporated.
  5. Mix-Ins: Fold in white chocolate chips and rainbow sprinkles evenly.
  6. Chill Dough: Cover and refrigerate dough for at least 1 hour (up to 2 days).
  7. Prep Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  8. Scoop Dough: Using a tablespoon or cookie scoop, portion dough onto prepared sheets, spacing evenly.
  9. Bake: Bake for 10–13 minutes until edges are golden and centers are soft.
  10. Cool: Let cookies cool on the sheet for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Do not skip chilling the dough—this helps the cookies hold their shape and enhances flavor.
  • You can press a few extra sprinkles or chips on top of each dough ball before baking for a prettier presentation.
  • Store in an airtight container at room temperature for up to 5 days or freeze for up to 2 months.
