Description
A delightful treat that combines creamy, fluffy ricotta with the sweet, caramelized flavor of roasted grapes, perfect for breakfast, brunch, or a light dessert.
Ingredients
Scale
- 1 cup fresh ricotta cheese
- 4 slices of crusty bread (such as sourdough or ciabatta)
- 2 tablespoons olive oil (plus extra for drizzling)
- 2 tablespoons honey (plus extra for drizzling)
- 1 teaspoon fresh thyme, chopped (or a few sprigs for garnish)
- 1 cup red grapes, washed and stems removed
- A pinch of salt
- Black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Spread the washed red grapes on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and a pinch of salt. Toss gently to coat the grapes evenly. Roast in the preheated oven for about 15-20 minutes, or until the grapes are soft and slightly caramelized.
- While the grapes are roasting, place the fresh ricotta cheese in a mixing bowl. Add 1 tablespoon of olive oil, 1 tablespoon of honey, and a pinch of salt. Whip the ricotta until smooth and creamy.
- Toast the slices of crusty bread over medium heat until golden brown and crispy on both sides, about 3-4 minutes per side.
- Spread a generous layer of the whipped ricotta on each slice of toasted bread. Top with the roasted grapes.
- Drizzle a little extra honey over the top and finish with a sprinkle of fresh thyme and a dash of black pepper. Serve immediately.
Notes
- For a dairy-free option, use plant-based ricotta.
- Swap honey for maple syrup for a vegan version.
- Use gluten-free bread for gluten sensitivities.
- Store whipped ricotta and roasted grapes separately in airtight containers in the refrigerator.
