Description

Vanilla Cream Tarts with Fresh Raspberries are elegant individual desserts featuring a buttery tart crust, silky vanilla custard, and juicy raspberries. Perfect for any occasion, these tarts are as delicious as they are beautiful.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 2–4 tablespoons cold water
  • 2 cups whole milk
  • 3 large egg yolks
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon unsalted butter
  • 1 ½ cups fresh raspberries
  • 1 tablespoon powdered sugar (optional, for dusting)

Instructions

  1. Preheat the oven to 375°F (190°C). In a bowl, mix flour, butter, and sugar until the mixture resembles coarse crumbs.
  2. Add the egg yolk and mix. Gradually add cold water until the dough forms. Shape into a disc, wrap, and refrigerate for at least 30 minutes.
  3. Roll the dough to 1/8 inch thick. Press into tart pans, trim, and prick the bottoms. Cover with parchment and pie weights.
  4. Bake for 15 minutes. Remove weights and parchment, then bake for another 5-7 minutes until lightly golden. Cool completely.
  5. In a saucepan, bring milk to a simmer. In a bowl, whisk egg yolks, sugar, and cornstarch. Slowly add hot milk to temper, then return to saucepan.
  6. Cook while stirring until thick and bubbly. Remove from heat and stir in vanilla extract and butter. Let cool slightly.
  7. Fill the cooled tart crusts with the vanilla cream, smoothing the tops. Chill for at least 2 hours until set.
  8. Top each tart with fresh raspberries and dust with powdered sugar if desired. Serve and enjoy.

Notes

  • Use almond or oat milk for a dairy-free filling.
  • Substitute the tart crust with a gluten-free flour blend if needed.
  • Add citrus zest to the vanilla cream for a flavor twist.
  • These tarts are best served chilled and fresh.
