Description

A delightful dessert that combines creamy texture with a burst of fruity flavor, featuring rich vanilla bean essence and sweet tangy plum sauce.

Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 1/2 teaspoons gelatin powder
  • 2 vanilla beans or 2 teaspoons vanilla extract
  • 4 ripe plums, pitted and chopped
  • 1/4 cup water
  • 2 tablespoons additional sugar

Instructions

  1. Prepare the gelatin by sprinkling it over 3 tablespoons of cold water in a small bowl and let it sit for 5-10 minutes.
  2. Combine heavy cream, milk, and 1/2 cup of sugar in a medium saucepan. If using vanilla beans, split them and scrape the seeds into the mixture.
  3. Heat the mixture over medium heat until the sugar dissolves and it is hot but not boiling. Remove from heat.
  4. Add the bloomed gelatin to the hot cream mixture and stir until completely dissolved. If using vanilla extract, add it now.
  5. Pour the panna cotta mixture into individual serving cups or molds, cool to room temperature, cover, and refrigerate for at least 4 hours.
  6. Prepare the plum sauce by cooking chopped plums, 1/4 cup of water, and 2 tablespoons of sugar in a small saucepan over medium heat until thickened.
  7. Strain the plum sauce through a fine-mesh sieve to remove solids and allow it to cool.
  8. Once the panna cotta has set, run a knife around the edges to loosen and invert onto plates or serve in cups.
  9. Drizzle the cooled plum sauce over the panna cotta.
  10. Garnish with fresh mint leaves or crushed nuts if desired and serve chilled.

Notes

  • Store panna cotta in the refrigerator for up to 3 days.
  • Leftover plum sauce can be stored in an airtight container for up to a week.
  • For a vegan version, use coconut cream and almond milk, and substitute gelatin with agar-agar.
