Description

A delightful Triple Berry Shortcake that combines the sweetness of strawberries, blueberries, and raspberries with a fluffy, buttery shortcake base.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, plus extra for whipping
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1/4 cup powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, sugar, and salt.
  3. In a large mixing bowl, beat the softened unsalted butter until creamy, then add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the heavy cream, mixing until just combined.
  5. Divide the batter between the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. In a medium bowl, beat the heavy cream until soft peaks form, then add powdered sugar and beat until stiff peaks form.
  8. Once cooled, place one cake layer on a serving plate, spread whipped cream, and add half of the berries. Top with the second cake layer.
  9. Spread more whipped cream on top and decorate with remaining berries, dusting with powdered sugar.

Notes

  • Store leftovers in an airtight container at room temperature for up to two days.
  • For longer storage, freeze the baked shortcake for up to three months.
  • Use fresh, ripe berries for the best flavor.
