Tex-Mex Stuffed Peppers with Ground Beef are a delightful dish that combines vibrant flavors and hearty textures, perfect for family dinners or festive occasions.

Ingredients

Scale
  • 4 large bell peppers (mixed colors: green, red, orange)
  • 1 lb (450 g) ground beef
  • 1 can (15 oz or 425 g) black beans, drained and rinsed
  • 1 cup (150 g) corn (frozen or canned)
  • 1 can (14.5 oz or 410 g) diced tomatoes, undrained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup (100 g) shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Olive oil (for cooking)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the bell peppers and slice the tops off, removing the seeds and membranes.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Season with salt, pepper, cumin, and chili powder. Cook until the beef is browned.
  5. Stir in the black beans, corn, and diced tomatoes into the beef mixture. Cook for an additional 2-3 minutes.
  6. Spoon the beef mixture into each bell pepper, packing it tightly.
  7. Sprinkle the shredded cheese generously over the top of each stuffed pepper.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes.
  9. Garnish with freshly chopped cilantro before serving.

Notes

  • For a healthier option, use ground turkey or chicken instead of beef.
  • For a vegetarian option, replace the ground beef with lentils or mushrooms.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
