Ingredients

Scale
  • 1 pound ground beef
  • 10–12 corn tortillas (about 8-inch size)
  • 2 cups enchilada sauce (homemade or store-bought)
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 medium onion, diced
  • 1 cup bell peppers, diced (any color)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil (for cooking)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil and sauté diced onions and bell peppers for 3-4 minutes. Add ground beef, season with cumin, garlic powder, salt, and pepper, and cook until browned (5-7 minutes). Drain excess fat.
  3. Spread a thin layer of enchilada sauce on the bottom of a 9×13 inch (23×33 cm) baking dish.
  4. Layer corn tortillas over the sauce, followed by half of the ground beef mixture, half of the black beans, enchilada sauce, and one cup of shredded cheese.
  5. Add another layer of tortillas, remaining ground beef, black beans, enchilada sauce, and another cup of shredded cheese.
  6. Top with a final layer of tortillas, remaining enchilada sauce, and the last cup of shredded cheese.
  7. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  8. Let cool for a few minutes, garnish with chopped cilantro, cut into squares, and serve warm.
