  • Yield: 4 servings 1x
  • Diet: Gluten Free

Description

A delightful mix of flavors and textures featuring tender chicken marinated in zesty spices, fresh vegetables, and creamy tzatziki sauce.

Ingredients

Scale
  • 500 grams (about 1 pound) chicken breast
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste
  • 1 medium cucumber, diced
  • 2 medium tomatoes, diced
  • 1 small red onion, thinly sliced
  • 100 grams (about 3.5 ounces) feta cheese, crumbled
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 2 pieces of pita bread

Instructions

  1. Marinate the chicken by mixing olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper in a bowl. Coat the chicken breasts and let them marinate for at least 30 minutes.
  2. Cook the chicken in a grill pan or skillet over medium-high heat for about 6-7 minutes on each side until cooked through and golden brown.
  3. Prepare the vegetables by dicing the cucumber and tomatoes, and thinly slicing the red onion.
  4. Warm the pita bread in a dry skillet or on a grill for about 1-2 minutes on each side.
  5. Assemble the bowl starting with a base of sliced chicken, then arrange the diced cucumber, tomatoes, and red onion around it. Sprinkle crumbled feta cheese on top.
  6. Drizzle tzatziki sauce over the chicken and vegetables to finish.

Notes

  • For gluten-free, use quinoa instead of pita bread.
  • For vegan, replace chicken with grilled tofu or chickpeas.
  • Store leftovers in an airtight container in the fridge for up to three days.
  • Reheat chicken and vegetables in the microwave; freeze without tzatziki sauce.
