Description

This Teriyaki Pineapple Chicken Stuffed Peppers Recipe is a delightful blend of sweet and savory flavors. The juicy ground chicken, tangy teriyaki sauce, and fresh pineapple come together in vibrant bell peppers, creating a dish that is both colorful and satisfying.

Ingredients

Scale
  • 4 large bell peppers (any color)
  • 1 lb (450 g) ground chicken
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup teriyaki sauce
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup shredded cheese (such as mozzarella or cheddar)
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Drizzle the outside with olive oil and place them upright in a baking dish.
  3. In a large skillet over medium heat, add olive oil, minced garlic, and grated ginger. Sauté for about 1 minute until fragrant. Add ground chicken, season with salt and pepper, and cook until browned and fully cooked, about 5-7 minutes.
  4. Stir in pineapple chunks and teriyaki sauce. Cook for an additional 2-3 minutes. Remove from heat and stir in chopped green onions.
  5. Spoon the chicken and pineapple mixture into each bell pepper, packing it down gently.
  6. Sprinkle shredded cheese over the top of each stuffed pepper. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the microwave or oven until heated through.
  • You can freeze the stuffed peppers before baking for up to 3 months.
