A delightful blend of flavors and textures, this Sweet Corn Peach Cobbler features ripe peaches and sweet corn, perfect for summer gatherings.

Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced
  • 1 cup sweet corn kernels, fresh or frozen
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Prepare the peaches by peeling and slicing them. If using frozen peaches, thaw and drain excess liquid.
  2. In a large bowl, combine the sliced peaches, sweet corn, and half of the sugar. Toss gently to coat.
  3. In another bowl, whisk together the flour, baking powder, salt, and remaining sugar. Stir in the milk and melted butter until just combined.
  4. Pour the batter into a greased baking dish and spoon the peach and corn mixture over the top. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes until golden brown and bubbly.
