Description

A delightful dish that combines sweet and savory flavors with perfectly glazed salmon and fresh nectarines.

Ingredients

Scale
  • 4 salmon fillets (about 6 oz each)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 fresh nectarines, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the marinade by whisking together soy sauce, honey, minced garlic, and grated ginger in a small bowl.
  2. Marinate the salmon by placing it in a shallow dish or resealable bag, pouring the marinade over it, and refrigerating for at least 30 minutes.
  3. Make the nectarines salsa by combining diced nectarines, chopped red onion, chopped cilantro, and lime juice in a separate bowl. Season with salt and pepper.
  4. Cook the salmon by preheating the oven to 400°F (200°C), heating olive oil in an oven-safe skillet, cooking the salmon skin-side down for 3-4 minutes, flipping it, pouring the remaining marinade over, and baking for 8-10 minutes.
  5. Finish with a drizzle of the sticky glaze from the skillet over the cooked salmon. Top each fillet with a generous spoonful of the fresh nectarine salsa just before serving.

Notes

  • For gluten-free, use tamari instead of soy sauce.
  • Replace honey with maple syrup for a vegan option.
  • Use peaches instead of nectarines if out of season.
  • Store leftovers in an airtight container for up to 2 days.
  • Reheat salmon in the oven at 350°F to avoid drying out.
