Description

A refreshing Spring Roll Salad with a zesty Spicy Ginger Dressing, perfect for warm weather and packed with vibrant flavors.

Ingredients

Scale
  • 4 cups fresh lettuce, chopped (such as romaine or butter lettuce)
  • 1 cup shredded carrots
  • 1 medium cucumber, julienned
  • 1 medium bell pepper (any color), thinly sliced
  • 1 ripe avocado, sliced
  • 100 grams (about 3.5 oz) rice noodles
  • 1/2 cup fresh herbs (such as cilantro, mint, or basil), chopped
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Cook the rice noodles according to the package instructions, typically boiling them in water for about 4-6 minutes until tender. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. In a large mixing bowl, combine the chopped lettuce, shredded carrots, julienned cucumber, sliced bell peppers, and sliced avocado. Toss gently to mix the vegetables evenly.
  3. In a small bowl, whisk together the olive oil, soy sauce, grated ginger, honey or maple syrup, lime juice, minced garlic, and red pepper flakes. Taste and adjust the seasoning with salt and pepper as needed.
  4. Add the cooked rice noodles to the bowl of mixed vegetables. Pour the spicy ginger dressing over the salad and toss gently to ensure everything is well coated with the dressing.
  5. Sprinkle the chopped fresh herbs over the salad and give it one last gentle toss to incorporate the herbs without bruising them.

Notes

  • Store any leftover salad in an airtight container in the refrigerator and enjoy within two days.
  • Keep the dressing separate until ready to serve to maintain the crispness of the vegetables.
  • For extra crunch, add nuts or seeds just before serving.
