Description
A delightful dish that combines creamy flavors with a satisfying crunch, featuring tender chicken, spinach, and artichokes in a rich Alfredo sauce.
Ingredients
Scale
- 2 cups fresh spinach
- 1 can artichoke hearts, drained and chopped
- 2 chicken breasts, cooked and sliced
- 8 oz fettuccine pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup broccoli florets
Instructions
- Start by boiling a large pot of salted water. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper.
- Add the cooked pasta, spinach, artichokes, and sliced chicken to the skillet. Toss everything together until well coated in the creamy sauce. Cook for an additional 2-3 minutes until heated through.
- While the pasta is cooking, preheat your oven to 400°F (200°C). Toss the broccoli florets with olive oil, salt, and pepper. Spread them on a baking sheet and sprinkle with Parmesan cheese. Bake for 15-20 minutes until crispy and golden.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Swap chicken for grilled shrimp or tofu for a vegetarian option.
- If gluten-free, use gluten-free pasta.
- Add extra veggies like bell peppers or mushrooms for more flavor.
