Description

A delightful dish that combines creamy, spicy flavors with a satisfying crunch, featuring whipped feta in a classic Alfredo sauce and crispy eggplant wedges.

Ingredients

Scale
  • 2 chicken breasts (about 1 lb or 450 g)
  • 1 cup whipped feta cheese
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 8 oz (225 g) fettuccine pasta
  • 1 medium eggplant, sliced into wedges
  • 1 cup breadcrumbs
  • 1/4 cup olive oil (for cooking and drizzling)
  • Fresh basil leaves (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the eggplant into wedges, drizzle with olive oil, and season with salt and pepper. Toss to coat and spread on a baking sheet. Bake for 25-30 minutes, flipping halfway through.
  2. Season the chicken breasts with salt, pepper, and red pepper flakes. In a skillet, heat olive oil and cook the chicken for 6-7 minutes per side until fully cooked. Let rest before slicing.
  3. In the same skillet, sauté minced garlic for 1 minute. Add heavy cream and bring to a simmer. Stir in whipped feta until melted and smooth. Adjust consistency with pasta water if needed.
  4. Add cooked fettuccine to the skillet and toss to coat in the sauce. Adjust with more pasta water if necessary.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • Reheat pasta in a skillet over low heat, adding cream if needed.
  • Avoid freezing eggplant wedges to maintain crispiness.
