Description
A delightful dish that combines bold flavors with creamy textures, featuring shrimp and spices for a comforting meal.
Ingredients
Scale
- 1 pound of rattlesnake shrimp, peeled and deveined (or substitute with regular shrimp)
- 8 ounces of penne pasta
- 8 ounces of cream cheese, softened
- 1 cup of shredded pepper jack cheese
- 3 cloves of garlic, minced
- 1 can (14.5 oz) of diced tomatoes, drained
- 1/4 cup of green onions, chopped (plus extra for garnish)
- 1/2 cup of breadcrumbs
- 1 tablespoon of olive oil
- Salt and black pepper to taste
- 1/2 teaspoon of red pepper flakes (optional for extra spice)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Add the rattlesnake shrimp and cook until they turn pink and opaque, about 3-4 minutes. Season with salt, black pepper, and red pepper flakes if using. Remove from heat.
- In a large mixing bowl, combine the softened cream cheese and half of the shredded pepper jack cheese. Stir in the drained diced tomatoes, cooked shrimp, and chopped green onions. Mix until well combined.
- Add the cooked penne pasta to the shrimp and cheese mixture. Gently fold everything together until the pasta is well coated.
- Pour the pasta mixture into a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle the remaining shredded pepper jack cheese over the top of the pasta bake, followed by an even layer of breadcrumbs.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- To reheat, place the pasta bake in the oven at 350°F (175°C) until warmed through.
- If freezing, cover the dish tightly with foil and freeze for up to two months.
