Description

A delightful blend of sweet and spicy flavors, these Spicy Pineapple BBQ Chicken Skewers are perfect for summer barbecues and family gatherings.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 1 cup fresh pineapple, cut into chunks
  • 1 medium red bell pepper, cut into squares
  • 1 medium onion, cut into squares
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 2 tablespoons brown sugar
  • 1/4 cup soy sauce
  • 1/2 cup barbecue sauce
  • 1 tablespoon olive oil (for grilling)
  • Salt and pepper to taste
  • 4–6 skewers (if using wooden skewers, soak in water for 30 minutes before use)

Instructions

  1. In a large bowl, combine the soy sauce, brown sugar, garlic powder, cayenne pepper, and a pinch of salt and pepper. Mix well until the sugar is dissolved.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stove.
  4. Thread the marinated chicken, pineapple chunks, red bell pepper squares, and onion squares onto the skewers, alternating between the ingredients for a colorful presentation.
  5. Once assembled, brush the skewers lightly with barbecue sauce, reserving some for basting while grilling.
  6. Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally and basting with additional barbecue sauce, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (75°C).
  7. Remove the skewers from the grill and let them rest for a few minutes. Serve warm, garnished with fresh herbs if desired.

Notes

  • For a gluten-free option, use gluten-free soy sauce.
  • Swap chicken for tofu or shrimp for a different protein.
  • Use agave syrup instead of brown sugar for a vegan alternative.
  • Add other vegetables like zucchini or cherry tomatoes for extra flavor and color.
