Description

A delightful dish that combines sweet and spicy flavors with juicy chicken and a tangy peach glaze.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 2 ripe peaches, sliced
  • 2 jalapeños, seeded and finely chopped
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice, freshly squeezed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. In a medium bowl, combine honey, soy sauce, lime juice, minced garlic, and chopped jalapeños. Whisk until well mixed. Season with salt and pepper to taste.
  2. Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your oven to 400°F (200°C).
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade for later) and place the thighs skin-side down in the skillet. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip the chicken and sear the other side for an additional 3-4 minutes.
  5. Once both sides of the chicken are seared, arrange the sliced peaches around the chicken in the skillet. Pour the reserved marinade over the chicken and peaches.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the peaches are tender.
  7. For an extra glossy finish, broil the chicken for an additional 2-3 minutes after baking, keeping a close eye to prevent burning.
  8. Remove the skillet from the oven and let the chicken rest for a few minutes. Garnish with freshly chopped cilantro before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • To reheat, warm the chicken in the microwave or on the stovetop.
  • For freezing, wrap the chicken tightly in plastic wrap and then in foil; it can be frozen for up to three months.
