Description

A delightful dish bursting with flavor, combining juicy shrimp and sweet corn with a kick of spices.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 cup corn kernels (fresh or frozen)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1/4 cup fresh cilantro, chopped
  • 1 medium avocado, sliced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the large shrimp, olive oil, minced garlic, smoked paprika, cayenne pepper, lime juice, salt, and pepper. Toss well to ensure the shrimp are evenly coated in the marinade. Allow the shrimp to marinate for at least 15-20 minutes.
  2. If using fresh corn, grill the corn on the cob for a few minutes until slightly charred, then cut the kernels off. If using frozen corn, sauté it in a skillet with a little olive oil over medium heat for about 5-7 minutes until heated through.
  3. Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated shrimp in a single layer. Grill for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
  4. In a large serving bowl, layer the grilled corn at the bottom. Top with the grilled shrimp, then scatter the chopped fresh cilantro over the shrimp and corn. Finally, add the sliced avocado on top.

Notes

  • For a vegan option, replace shrimp with grilled tofu or chickpeas.
  • Use frozen corn if fresh corn is not available.
  • Adjust spices to your taste; add cayenne for extra heat or omit for a milder flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • To reheat, warm in the microwave for a minute or two.
