Description

A delightful no-bake dessert that combines the classic flavors of s’mores with layers of creamy chocolate, fluffy marshmallow, and crunchy graham crackers.

Ingredients

Scale
  • 2 cups graham crackers, crushed (about 1 package)
  • 1 cup marshmallow fluff
  • 1 package (3.9 oz) chocolate pudding mix
  • 2 cups milk (for pudding)
  • 2 cups whipped cream (or 1 tub of store-bought whipped topping)
  • 1/2 cup mini chocolate chips (for topping)
  • Optional: Toasted marshmallows (for garnish)

Instructions

  1. In a medium bowl, whisk together the chocolate pudding mix and milk until well combined. Let it sit for about 5 minutes to thicken.
  2. In another bowl, combine the marshmallow fluff with 1 cup of the whipped cream. Gently fold until the mixture is smooth and well blended.
  3. In a rectangular dish (9×13 inches works well), start by placing a layer of crushed graham crackers at the bottom. Spread half of the chocolate pudding over the graham crackers, smoothing it out evenly.
  4. Spoon half of the marshmallow fluff mixture over the chocolate pudding layer, spreading it evenly.
  5. Add another layer of crushed graham crackers, followed by the remaining chocolate pudding, and then the rest of the marshmallow fluff mixture. Finish with a final layer of crushed graham crackers on top.
  6. Spread the remaining whipped cream over the top layer of graham crackers, smoothing it out to create an even surface.
  7. Sprinkle the mini chocolate chips evenly over the whipped cream layer. If desired, you can also add toasted marshmallows on top for an extra touch.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
  9. Once chilled, slice the S’mores Icebox Cake into squares and serve.

Notes

  • For a gluten-free option, use gluten-free graham crackers.
  • Substitute chocolate pudding with vanilla pudding for a different flavor profile.
  • Use dairy-free whipped topping for a vegan version.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freezing is not recommended as it may alter the texture.
