A delightful blend of flavors with a rich, smoky taste from chipotle peppers, tender beef, and a medley of beans, perfect for cozy dinners.

Ingredients

Scale
  • 1 lb (450 g) ground beef
  • 2–3 chipotle peppers in adobo sauce, minced (adjust for spice preference)
  • 1 can (15 oz or 425 g) kidney beans, drained and rinsed
  • 1 can (14.5 oz or 410 g) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 2 cups (480 ml) beef broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare the ingredients by chopping the onion, garlic, and bell peppers, and mincing the chipotle peppers.
  2. In a large pot, heat olive oil over medium-high heat, add ground beef, and cook until browned. Season with salt and pepper and drain excess fat.
  3. Add chopped onion, garlic, and bell peppers to the pot and cook for 5-7 minutes until softened.
  4. Stir in minced chipotle peppers, cumin, and smoked paprika, cooking for an additional 2 minutes.
  5. Pour in diced tomatoes, kidney beans, and beef broth, stirring well to combine.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for at least 30 minutes, stirring occasionally.
  7. Taste and adjust seasoning with more salt, pepper, or chipotle peppers if desired.
  8. Ladle into bowls and garnish with fresh cilantro before serving.

Notes

  • For a leaner option, substitute ground turkey or chicken for beef.
  • For vegetarian, replace meat with lentils or mushrooms.
  • Use vegetable broth for a lighter flavor.
  • Reduce chipotle peppers for less heat.
