Ingredients
Scale
- 1.5 pounds of baby potatoes, washed and halved if large
- 1 packet of Lipton onion soup mix (about 1 ounce or 28 grams)
- 4 tablespoons of unsalted butter, cut into small pieces
- 4 cloves of garlic, minced
- 1 cup of water (240 ml)
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the baby potatoes thoroughly under running water.
- In a small bowl, combine the Lipton onion soup mix, minced garlic, and black pepper.
- Place the washed baby potatoes in the bottom of the slow cooker and sprinkle the onion soup mix and garlic mixture over them.
- Distribute the butter pieces evenly over the potatoes.
- Pour the cup of water over the potatoes and seasonings.
- Cover the slow cooker and set it to low heat. Cook for 6 to 8 hours, or until the potatoes are fork-tender.
Notes
- For a vegan option, replace butter with olive oil or vegan butter.
- Use vegetable broth instead of water for added flavor.
- Try adding herbs like rosemary or thyme for a fresh twist.
- For a lower-carb option, substitute baby potatoes with cauliflower florets.
