Description

Savory Spinach Feta Breakfast Wraps are a delightful and nutritious way to start your day, combining feta cheese and fresh spinach in a whole wheat tortilla.

Ingredients

Scale
  • 4 large whole wheat tortillas
  • 2 cups fresh spinach, packed
  • 1 cup crumbled feta cheese
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Rinse the fresh spinach under cold water and pat dry. Halve the cherry tomatoes and set aside. Crumble the feta cheese if not already crumbled.
  2. Cook the Eggs: In a medium bowl, crack the eggs and whisk them until well combined. Season with salt and pepper. In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Pour in the whisked eggs and cook, stirring gently, until the eggs are just set but still slightly soft. Remove from heat and set aside.
  3. Sauté the Spinach: In the same skillet, add the remaining tablespoon of olive oil. Add the fresh spinach and sauté for 1-2 minutes, until wilted. Remove from heat.
  4. Assemble the Wraps: Lay a whole wheat tortilla flat on a clean surface. In the center of the tortilla, layer a portion of the scrambled eggs, sautéed spinach, halved cherry tomatoes, and crumbled feta cheese.
  5. Roll the Wraps: Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely. Repeat with the remaining tortillas and filling.
  6. Toast the Wraps (Optional): For an extra crispy texture, place the assembled wraps seam-side down in the skillet over medium heat. Cook for 2-3 minutes on each side until golden brown and crispy.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze the wraps wrapped in plastic wrap and then in a freezer bag for up to 2 months.
  • Consider adding spices like garlic powder or paprika for extra flavor.
