Description

These Salted Caramel Cheesecake Cookies combine the rich creaminess of cheesecake with the sweet-salty allure of caramel, all wrapped in a soft, chewy cookie. Perfectly balanced in texture and flavor, they are a delightful treat for any cookie lover.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup salted caramel sauce (store-bought or homemade)
  • 1/2 cup chocolate chips (optional)
  • Sea salt for sprinkling

Instructions

  1. In a bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  2. In a large mixing bowl, cream the softened butter and cream cheese with an electric mixer until smooth and fluffy, about 2-3 minutes.
  3. Add the granulated sugar and brown sugar. Mix until well combined.
  4. Beat in the egg and vanilla extract until fully incorporated, about 1-2 minutes.
  5. Gradually mix the dry ingredients into the wet mixture just until combined. Avoid over-mixing.
  6. If using, gently fold in the chocolate chips.
  7. Fold in half of the salted caramel sauce to create a marbled effect in the dough.
  8. Chill the cookie dough in the refrigerator for at least 30 minutes.
  9. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  10. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
  11. Bake for 10-12 minutes or until the edges are golden brown. Let cool for a few minutes on the sheet.
  12. Drizzle the remaining caramel sauce over each cookie and sprinkle with sea salt before serving.

Notes

  • For a gluten-free version, substitute with a gluten-free flour blend.
  • Use vegan butter and cream cheese for a dairy-free alternative.
  • Crushed nuts or cinnamon can be added for extra flavor and texture.
  • Chilling the dough is essential for preventing excessive spreading.
