Description

Reuben Balls with Spicy Dip are a delightful twist on the classic Reuben sandwich, combining savory corned beef, creamy cheese, and tangy sauerkraut in a crispy exterior.

Ingredients

Scale
  • 1 cup corned beef, finely chopped
  • 1 cup Swiss cheese, shredded
  • 1/2 cup sauerkraut, drained and chopped
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten (for binding)
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine the finely chopped corned beef, shredded Swiss cheese, chopped sauerkraut, breadcrumbs, Dijon mustard, garlic powder, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Add the beaten eggs to the mixture and stir until everything is well combined.
  3. Using your hands, take a small amount of the mixture (about 1-2 tablespoons) and roll it into a ball. Repeat this process until all the mixture is used.
  4. In a deep skillet or frying pan, pour enough vegetable oil to cover the bottom, about 1-2 inches deep. Heat the oil over medium heat until it reaches 350°F (175°C).
  5. Carefully add a few balls to the hot oil and fry them for about 3-4 minutes, or until they are golden brown and crispy on all sides.
  6. In a small bowl, mix together the mayonnaise, sriracha, and lemon juice until smooth.
  7. Arrange the golden-brown Reuben balls on a serving platter and serve warm with the spicy dipping sauce on the side.

Notes

  • Store any leftover Reuben Balls in an airtight container in the refrigerator for up to three days.
  • To reheat, place the balls in an oven at 350°F for about 10 minutes until heated through.
  • For freezing, place them in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag.
