Description

This Raw Lemon Ginger Chia Cheesecake is a refreshing, no-bake vegan dessert with zesty citrus, creamy cashews, and a crunchy almond crust. It’s perfect for clean eating, gluten-free, and dairy-free lifestyles while delivering an indulgent, silky texture.

Ingredients

Scale

Crust:

  • 3/4 cup raw almonds
  • 1 soft medjool date, pitted
  • 1 tbsp coconut oil, softened
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup

Filling:

  • 3/4 cup raw cashews, pre-soaked and strained
  • 5 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil, liquefied
  • 1 tsp ground ginger
  • 1 tsp pure vanilla extract
  • 1/8 tsp turmeric
  • 1 tbsp chia seeds

Optional Toppings:

  • Crust mixture balls
  • Fresh lemon slices
  • Fresh rosemary sprig
  • Chia seeds for sprinkling

Instructions

  1. Prepare the Crust: In a food processor, blend raw almonds, date, coconut oil, chia seeds, and maple syrup until a sticky crumble forms.
  2. Form Crust and Balls: Reserve a small amount of crust to form decorative balls. Press the rest into a 5″ springform pan to form an even crust. Freeze to set.
  3. Make the Filling: In a high-speed blender, combine soaked cashews, lemon juice and zest, maple syrup, coconut oil, ginger, vanilla, and turmeric. Blend until silky smooth.
  4. Add Chia and Assemble: Stir chia seeds into the filling. Pour over the crust and smooth the top with a spatula.
  5. Decorate and Freeze: Top with optional lemon slices, crust balls, and chia seeds. Cover and freeze for at least 5 hours or overnight.
  6. Serve: Let thaw for 15–20 minutes before slicing. Garnish with a rosemary sprig if desired.

Notes

  • Nut-free: Substitute almonds with sunflower seeds or oats.
  • Use sugar-free sweeteners like stevia or erythritol for a lower-sugar version.
  • No cashews? Use a mix of soaked sunflower and pumpkin seeds.
  • Flavor twist: Add a pinch of cayenne or herbs like mint for depth.
