Description

Pineapple Upside Down Pancakes are a tropical breakfast delight inspired by the classic dessert. These fluffy pancakes are topped with caramelized pineapple and brown sugar for a warm, sweet, and tangy twist that’s perfect for brunch.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh pineapple, sliced or canned (drained)
  • 1/2 cup brown sugar
  • 2 tablespoons butter (for caramelizing)
  • Chopped nuts (optional) for toppings

Instructions

  1. In a skillet, melt 2 tablespoons of butter over medium heat. Stir in the brown sugar until it becomes syrupy. Add pineapple slices in a single layer and cook for 3–5 minutes until caramelized. Set aside.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together buttermilk, egg, melted butter, and vanilla extract. Combine the wet and dry ingredients, stirring gently until just mixed.
  3. Heat a non-stick skillet over medium heat and lightly grease it. Spoon in the pancake batter and cook until bubbles form on the surface (2–3 minutes). Flip and cook for another 1–2 minutes until golden brown.
  4. Place the cooked pancake on a plate and spoon caramelized pineapple on top. Serve warm, optionally topped with chopped nuts.

Notes

  • Do not overmix the batter—some lumps are okay.
  • Serve pancakes warm for the best flavor and texture.
  • You can use canned pineapple if fresh isn’t available.
  • Add chopped nuts or shredded coconut for a fun variation.
