Ingredients
Scale
- 1 lb (450 g) chicken breast, cut into 1-inch cubes
- 1 cup fresh pineapple chunks
- 1 bell pepper (any color), cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Prepare the marinade by combining soy sauce, honey, minced garlic, grated ginger, sesame oil, salt, and pepper in a mixing bowl.
- Add the cubed chicken breast to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes.
- Thread the marinated chicken, pineapple chunks, bell pepper pieces, and red onion pieces onto the skewers, alternating for a colorful presentation.
- Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through.
Notes
- For gluten-free, use tamari instead of soy sauce.
- For vegan, replace chicken with firm tofu or mushrooms.
- Store leftovers in an airtight container in the fridge for up to three days.
- Reheat in the microwave or oven, covering with foil to keep moist.
