Description

A delightful and nutritious Peach Cobbler Overnight Oats recipe that combines the sweet flavor of ripe peaches with creamy oats, perfect for busy mornings.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup almond milk (or any milk of choice)
  • 2 ripe peaches, diced
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey (or to taste)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped pecans (optional, toasted)

Instructions

  1. In a mixing bowl, combine the rolled oats, almond milk, Greek yogurt, honey, ground cinnamon, and vanilla extract. Stir well until everything is mixed together.
  2. In a glass or jar, start by adding a layer of the oat mixture at the bottom. Follow this with a layer of diced peaches. Repeat the layers until you reach the top of the glass, finishing with a layer of the oat mixture.
  3. Drizzle a little extra honey on top of the final layer of oats. Sprinkle the chopped pecans and a dash of cinnamon for added texture and flavor.
  4. Cover the glass or jar with a lid or plastic wrap and place it in the refrigerator. Allow the oats to soak overnight, or for at least 4 hours, so they can absorb the flavors and soften.

Notes

  • Store any leftovers in an airtight container in the fridge for up to 3 days.
  • If you want to enjoy your oats warm, microwave them for about 30 seconds.
  • For freezing, portion them into freezer-safe containers and thaw overnight in the fridge before serving.
