Description
A classic and elegant summer dessert featuring poached peaches, fresh raspberries, and vanilla ice cream, topped with a tangy raspberry sauce.
Ingredients
Scale
- 4 firm, ripe peaches
- 2 cups granulated sugar
- 1/2 cup confectioners’ sugar
- 1 tsp fresh lemon juice
- 3 cups fresh raspberries, divided
- Vanilla ice cream, for serving
Instructions
- Score an X into the bottom of each peach. In a large saucepan, combine 2 cups of granulated sugar with 4 cups of water and bring to a boil. Stir until sugar dissolves.
- Add the peaches and reduce heat to medium-low. Simmer for 6 to 10 minutes until tender. Remove with a slotted spoon and let cool.
- In a blender, combine 1/2 cup confectioners’ sugar, 1 tsp lemon juice, and 2 cups raspberries. Blend until smooth, then strain through a fine-mesh sieve to remove seeds.
- Peel the peaches, discard skins and pits, and cut into wedges.
- To serve, divide peach slices among bowls, add vanilla ice cream, drizzle with raspberry sauce, and top with remaining raspberries.
Notes
- Canned peaches can be used if fresh are unavailable.
- Natural sweeteners like honey or maple syrup can replace granulated sugar.
- Dairy-free ice cream can be substituted for a vegan version.
- Strawberries or blackberries can replace raspberries if needed.
