Description

Peach Melba Breakfast Tarts are a delightful combination of flaky puff pastry, creamy mascarpone, and fresh fruits, creating a perfect balance of flavors and textures.

Ingredients

Scale
  • 1 sheet puff pastry (thawed if frozen)
  • 2 medium fresh peaches, sliced
  • 1 cup fresh raspberries
  • 1 cup mascarpone cheese
  • 2 tablespoons honey (plus extra for drizzling)
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut the pastry into 4 equal rectangles or squares and transfer them to the prepared baking sheet.
  3. Using a sharp knife, score a smaller rectangle inside each pastry piece, about 1/2 inch from the edges.
  4. In a small bowl, beat the egg and brush it over the edges of the puff pastry rectangles.
  5. In a medium bowl, combine the mascarpone cheese, honey, and vanilla extract. Mix until smooth and creamy.
  6. Spread a generous layer of the mascarpone mixture inside the scored border of each puff pastry rectangle. Arrange the peach slices and raspberries on top.
  7. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the pastry is golden brown and puffed up.
  8. Once baked, remove the tarts from the oven and let them cool slightly. Drizzle a little extra honey over the top of each tart.
  9. Optionally, dust the tarts with powdered sugar for a decorative touch. Serve warm or at room temperature.

Notes

  • Store leftover tarts in an airtight container in the refrigerator for 2-3 days.
  • For reheating, place in a preheated oven at 350°F (175°C) for about 5-10 minutes.
  • For a gluten-free version, use gluten-free puff pastry.
  • For a vegan version, substitute mascarpone with plant-based cream cheese and use a flax egg.
