A refreshing summer pasta salad featuring sweet nectarines and creamy feta cheese, perfect for hot days.
Ingredients
Scale
- 250 grams (about 8 ounces) of pasta (your choice, such as fusilli or penne)
- 2 ripe nectarines, sliced into wedges
- 150 grams (about 5 ounces) of feta cheese, crumbled
- 1/2 cup of fresh basil leaves, roughly chopped
- 2 cups of arugula, packed
- 3 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- Salt, to taste
- Pepper, to taste
Instructions
- Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Set aside to cool.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined. Adjust seasoning to taste.
- In a large mixing bowl, add the cooled pasta, sliced nectarines, crumbled feta cheese, chopped basil, and arugula. Gently toss everything together until well mixed.
- Pour the dressing over the pasta mixture and gently toss everything together until the pasta and ingredients are evenly coated with the dressing.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- This salad is best served chilled.
- For extra flavor, let the salad sit for about 30 minutes before serving.
