Ingredients

Scale
  • 25 chocolate cookies (for crust)
  • 6 tablespoons salted butter, melted (for crust)
  • 4 ounces bittersweet chocolate, chopped
  • 3 tablespoons salted butter, melted (for brownie layer)
  • 3 tablespoons vegetable oil
  • 2 tablespoons unsweetened cocoa powder (for brownie layer)
  • 2/3 cup light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 tablespoons all-purpose flour
  • 8 chocolate cookies, roughly crushed (for topping)
  • 2 tablespoons powdered sugar (for topping)
  • 1 tablespoon Dutch-processed cocoa powder (for topping)
  • Pinch of salt (for topping)
  • 2 tablespoons salted butter, melted (for topping)
  • 6 ounces milk chocolate, chopped
  • 1 cup cold heavy cream (for mousse)
  • 2 tablespoons Dutch-processed cocoa powder (for mousse)
  • 2 tablespoons powdered sugar (for mousse)
  • Pinch of salt (for mousse)
  • 1 cup heavy cream (for whipped cream)
  • 1/4 cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder (for whipped cream)

Instructions

  1. Preheat oven to 325°F (163°C). Crush 25 chocolate cookies and mix with melted butter. Press into a 9-inch pie dish to form crust. Bake for 12–15 minutes. Cool completely.
  2. In a microwave-safe bowl, melt bittersweet chocolate, butter, vegetable oil, and cocoa powder. Stir until smooth.
  3. Mix in brown sugar, eggs, vanilla, and salt. Fold in flour. Spread over cooled crust.
  4. Bake brownie layer for 25–30 minutes until set. Cool completely.
  5. For the cookie topping, crush 8 chocolate cookies. Mix with powdered sugar, cocoa powder, salt, and melted butter. Spread on baking sheet and bake for 10 minutes. Cool.
  6. To make mousse, melt milk chocolate and cool slightly. Whip heavy cream with cocoa powder, powdered sugar, and salt to soft peaks. Fold into melted chocolate. Spread mousse over brownie. Chill 3 hours or overnight.
  7. Make chocolate whipped cream by beating cream, sugar, and cocoa powder to stiff peaks. Spread over mousse layer.
  8. Sprinkle cookie topping over whipped cream. Slice and serve chilled.

  • Use gluten-free cookies and dairy-free alternatives for dietary needs.
