Description
A refreshing Mediterranean Chickpea Cucumber Salad that combines fresh flavors and textures, perfect for any occasion.
Ingredients
Scale
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 small red onion, finely chopped
- 1 bell pepper (any color), diced
- 1/4 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Spread the drained and rinsed chickpeas on a baking sheet. Drizzle with a little olive oil and sprinkle with salt and pepper. Roast in the oven for about 20-25 minutes, or until they are golden brown and slightly crispy. Remove from the oven and let cool.
- While the chickpeas are roasting, prepare the vegetables. Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and dice the bell pepper. Place all the chopped vegetables in a large mixing bowl.
- Once the chickpeas have cooled, add them to the bowl with the vegetables. Add the chopped parsley and crumbled feta cheese to the mixture.
- In a small bowl, whisk together the olive oil, lemon juice, and a pinch of salt and pepper. Pour the dressing over the salad and toss gently to combine all the ingredients evenly.
- Transfer the salad to a serving dish or individual bowls. This salad can be served immediately or chilled in the refrigerator for about 30 minutes to allow the flavors to meld.
Notes
- For a vegan option, skip the feta cheese or use a plant-based alternative.
- Store leftovers in an airtight container in the refrigerator for up to three days.
- This salad is best enjoyed cold, so there’s no need to reheat.
- Be careful not to over-salt the salad, as the feta cheese can add extra saltiness.
