Description

Marshmallow Caramel Corn is a delicious and indulgent treat featuring crisp popcorn coated in a rich caramel sauce, combined with gooey mini marshmallows for a sweet and chewy snack. Perfect for parties, gifts, or as a homemade treat.

Ingredients

Scale
  • 1 cup popcorn kernels (popped, about 8–10 cups)
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup brown sugar (packed)
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups mini marshmallows (approximately 8 ounces)

Instructions

  1. Prepare the popcorn by popping it using an air popper, stovetop, or microwave. Remove any unpopped kernels and place the popped popcorn in a large mixing bowl.
  2. In a medium saucepan over medium heat, melt the butter. Add brown sugar and corn syrup, stirring continuously until the mixture comes to a boil. Boil for 4-5 minutes without stirring.
  3. Remove the caramel from heat and stir in vanilla extract and salt. The mixture may bubble, but this is normal.
  4. Pour the hot caramel over the popcorn, ensuring it is evenly coated. Gently fold the popcorn and caramel together using a spatula or wooden spoon.
  5. While the mixture is still warm, fold in mini marshmallows, letting the heat slightly melt them into the popcorn.
  6. Spread the mixture on a parchment-lined baking sheet and let it cool for 30 minutes. Once set, break it into clusters and store in an airtight container.

Notes

  • For a dairy-free version, substitute butter with coconut oil or a vegan butter alternative.
  • If you prefer a chocolatey twist, drizzle melted dark or white chocolate over the caramel corn.
  • Ensure popcorn is gluten-free if necessary by checking for certified gluten-free brands.
  • To store, keep the caramel corn in an airtight container at room temperature for up to 1-2 weeks for the best texture.
