Description
Mango Coconut Cream Puffs are a delightful fusion of tropical flavors and light, airy textures, featuring a crispy puff pastry shell filled with luscious coconut cream and topped with fresh mango.
Ingredients
- Puff pastry – 1 package (about 17.3 oz or 480 g, thawed if frozen)
- Coconut cream – 1 cup (chilled)
- Ripe mango – 1 large (peeled and diced)
- Powdered sugar – 2 tablespoons (plus extra for dusting)
- Vanilla extract – 1 teaspoon
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface and cut into circles about 3 inches in diameter.
- Place the pastry circles on the prepared baking sheet and bake for 15-20 minutes until puffed and golden brown. Let cool on a wire rack.
- In a mixing bowl, combine chilled coconut cream, powdered sugar, and vanilla extract. Whip until light and fluffy.
- Slice off the tops of each puff and fill with the coconut cream mixture.
- Top each puff with diced mango. Replace the tops.
- Dust with powdered sugar.
- Serve fresh on a platter.
Notes
- For a dairy-free option, ensure the puff pastry is dairy-free and use coconut cream.
- Substitute mango with other tropical fruits like pineapple or passion fruit for a different flavor.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
