Description

A delicious and nutritious breakfast option, these Lemon Blueberry Protein Pancakes are fluffy, packed with protein, and bursting with fresh blueberries and zesty lemon flavor.

Ingredients

Scale
  • 120 g whole wheat flour
  • 30 g protein powder
  • 150 g fresh blueberries
  • Zest of 1 lemon
  • 10 g baking powder
  • 2 large eggs
  • 240 ml almond milk
  • 15 ml honey (plus extra for drizzling)
  • A pinch of salt

Instructions

  1. In a large mixing bowl, combine the whole wheat flour, protein powder, baking powder, lemon zest, and a pinch of salt. Whisk together until well mixed.
  2. In another bowl, beat the eggs and then add the almond milk and honey. Whisk until the mixture is smooth and well combined.
  3. Pour the wet mixture into the bowl with the dry ingredients. Gently fold together until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the fresh blueberries.
  4. Preheat a non-stick skillet or griddle over medium heat. If necessary, lightly grease the surface with a small amount of oil or cooking spray.
  5. Pour about 60 ml of batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles start to form on the surface and the edges look set. Flip the pancakes and cook for an additional 2-3 minutes on the other side until golden brown.
  6. Remove the pancakes from the skillet and stack them high on a plate. Drizzle with honey and add a few extra blueberries on top for garnish.

Notes

  • Store leftover pancakes in an airtight container in the refrigerator for up to three days.
  • To reheat, microwave for about 30 seconds or until warm.
  • For fluffier pancakes, let the batter rest for a few minutes before cooking.
