Description
Firm, oven-baked Lemon Blueberry Cottage Cheese Protein Bites with a lightly golden exterior and a creamy yet stable center. These protein-rich bites hold their shape after baking, making them perfect for meal prep, snacks, or pre- and post-workout fuel.
Ingredients
Scale
- 1 cup full-fat cottage cheese, well drained
- ¾ cup fresh, firm blueberries
- 1 tablespoon lemon zest
- 2 tablespoons honey or maple syrup
- ½ cup almond flour
- ¼ cup vanilla protein powder (or oat flour)
- 1 tablespoon cornstarch or arrowroot powder
- 1 large egg white
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Drain the cottage cheese for 10–15 minutes using a fine mesh strainer or cheesecloth, pressing gently to remove excess liquid.
- In a bowl, mix the drained cottage cheese, egg white, honey, vanilla extract, lemon zest, and salt until mostly smooth.
- Add almond flour, protein powder, and cornstarch. Fold until a thick, scoopable dough forms.
- Cover and refrigerate for 30 minutes to firm up the mixture.
- Gently fold in the blueberries. Scoop and roll into tight balls, then place on a parchment-lined tray.
- Freeze the shaped bites for 20 minutes to lock in their shape.
- Preheat oven to 325°F (160°C). Bake for 14–16 minutes until set and lightly golden.
- Cool for 10 minutes before serving. The bites will firm up as they rest.
Notes
- Always use full-fat, well-drained cottage cheese to prevent melting.
- Do not skip the chilling and freezing steps for best shape retention.
- Protein powder can be replaced with oat flour if needed.
