Description
A delightful treat that combines rich chocolate flavor with a gooey, molten center, perfect for special occasions.
Ingredients
Scale
- 170 g dark chocolate, chopped (approximately 6 oz)
- 115 g unsalted butter (approximately 1/2 cup)
- 100 g granulated sugar (approximately 1/2 cup)
- 2 large eggs
- 2 large egg yolks
- 50 g all-purpose flour (approximately 1/3 cup)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 425°F (220°C).
- In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt using a double boiler or microwave.
- In a separate bowl, whisk together the granulated sugar, whole eggs, and egg yolks until pale and thickened.
- Pour the melted chocolate and butter mixture into the egg mixture, stirring gently to combine. Add vanilla extract and salt.
- Sift the all-purpose flour over the chocolate mixture and fold in gently until just combined.
- Grease four ramekins with butter and dust with flour. Divide the batter among the ramekins, filling each about 3/4 full.
- Place the ramekins on a baking sheet and bake for 12-14 minutes.
- Remove from the oven and let cool for about 1 minute. Run a knife around the edges to loosen the cakes.
- Invert each ramekin onto a plate and serve immediately.
Notes
- For a vegan option, substitute dark chocolate with dairy-free chocolate and use flax eggs.
- For gluten-free, use almond flour instead of all-purpose flour.
- Store leftovers in an airtight container in the refrigerator for up to two days.
- To reheat, microwave for 15-20 seconds.
