Description

A delightful dessert that combines creamy texture with floral notes of honey and lavender.

Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup honey
  • 2 tablespoons dried culinary lavender
  • 2 1/2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a saucepan, combine the heavy cream, whole milk, honey, and dried lavender. Heat over medium heat until it just begins to simmer. Remove from heat and let it steep for about 15 minutes.
  2. While the cream mixture is steeping, sprinkle the gelatin over the cold water in a small bowl. Let it sit for about 5 minutes until it blooms.
  3. Strain the cream mixture through a fine mesh sieve to remove the lavender. Return the strained mixture to the saucepan and gently reheat it. Stir in the bloomed gelatin, vanilla extract, and a pinch of salt until fully dissolved.
  4. Pour the mixture into individual serving cups or molds. Refrigerate for at least 4 hours, or until set.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • Reheating is not recommended; serve chilled.
  • Chill serving cups beforehand for an elegant touch.
