Ingredients
Scale
- 1 1/2 cups flour
- 1/2 cup vanilla protein powder
- 1/2 cup unflavored protein powder
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 2 cups non-fat Greek yogurt
- 2 tablespoons almond milk
- 3 tablespoons zero-calorie 1:1 sugar replacement
- 1 1/2 teaspoons cinnamon
- Optional: 2 tablespoons chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a loaf pan with butter or non-stick spray.
- In a large bowl, whisk together flour, both protein powders, baking powder, and baking soda until well combined.
- Add Greek yogurt, almond milk, and zero-calorie sugar replacement. Stir with a spatula until a sticky dough forms—do not overmix.
- With slightly wet hands, divide the dough into about 25 balls (approx. 2 tbsp each). Roll gently. Mix in pecans if using.
- In one small bowl, pour almond milk. In another, combine 1 1/2 teaspoons cinnamon and additional sugar replacement for coating.
- Dip each dough ball in almond milk, then roll in the cinnamon-sugar mixture. Stack the coated balls in the loaf pan.
- Bake uncovered for 20 minutes. Then cover loosely with foil and bake for another 10–15 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes. Invert onto a plate, then cool slightly more before serving warm.
Notes
- Wet your hands frequently when rolling dough—it helps manage the sticky texture.
- Great for meal prep—store in an airtight container and reheat gently before serving.
- Top with a light sugar-free glaze made from powdered erythritol and almond milk for added indulgence.
