Description

A delightful dish that combines the rich flavors of fresh heirloom tomatoes with creamy feta cheese, perfect for summer gatherings or a light dinner.

Ingredients

Scale
  • 1 sheet of puff pastry (thawed if frozen)
  • 4–5 medium-sized heirloom tomatoes (variety of colors)
  • 200 grams of feta cheese (crumbled)
  • A handful of fresh basil (chopped)
  • 2 tablespoons of olive oil
  • 2 cloves of garlic (minced)
  • Black pepper (to taste)
  • Balsamic glaze (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the puff pastry to fit your tart pan (approximately 9 inches in diameter) and place it into the tart pan.
  3. Prick the bottom of the pastry with a fork, cover with parchment paper, and fill with pie weights or dried beans. Bake for about 10 minutes, then remove the parchment and weights and bake for an additional 5 minutes until lightly golden.
  4. Wash and slice the heirloom tomatoes into thin rounds.
  5. In a small bowl, combine the minced garlic and olive oil, then brush this mixture over the pre-baked pastry shell.
  6. Sprinkle with crumbled feta cheese, layer the sliced heirloom tomatoes evenly over the garlic-oiled pastry, then follow with chopped fresh basil.
  7. Bake the assembled tart for an additional 20-25 minutes until the tomatoes are tender and the pastry is golden brown.
  8. Let the tart cool for a few minutes, then drizzle with balsamic glaze.
  9. Slice the tart into wedges and serve warm or at room temperature.
