Description

A delightful blend of sweet and savory flavors, this Grilled Pineapple BBQ Chicken Sandwich features juicy grilled chicken paired with caramelized pineapple, making it perfect for summer barbecues and family gatherings.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • 1 can of fresh pineapple slices (or 1 whole fresh pineapple, sliced)
  • 1 cup of your favorite BBQ sauce
  • 4 large hamburger buns
  • 4 leaves of lettuce (romaine or iceberg)
  • 1 small red onion, thinly sliced
  • 4 slices of cheddar cheese
  • 1 tablespoon of olive oil (for grilling)
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides. If using fresh pineapple, slice it into rings about 1/2 inch thick. Drizzle olive oil over the chicken.
  2. Preheat the grill or grill pan over medium-high heat and brush the grates with olive oil.
  3. Grill the chicken breasts for about 6-7 minutes on one side, then flip and brush BBQ sauce on the cooked side. Grill for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
  4. Add the pineapple slices to the grill in the last few minutes of cooking the chicken, cooking until caramelized, about 2-3 minutes per side.
  5. Toast the hamburger buns on the grill for about 1-2 minutes until golden brown.
  6. Assemble the sandwich by placing a grilled chicken breast, a slice of grilled pineapple, a slice of cheddar cheese, a leaf of lettuce, and a few slices of red onion on the bottom half of each toasted bun. Drizzle additional BBQ sauce on top and place the top half of the bun on each sandwich.

Notes

  • For a lighter option, consider using turkey or tofu instead of chicken.
  • Swap BBQ sauce for teriyaki sauce for a different flavor profile.
  • Use gluten-free buns if you have dietary restrictions.
  • Marinate the chicken in BBQ sauce for a few hours before grilling for added flavor.
