Description

A delightful dish that combines zesty flavors with a sweet twist, featuring juicy chicken marinated in fresh herbs and lemon, paired with a luscious apricot glaze.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons mixed herbs (such as thyme, rosemary, and parsley)
  • 1/4 cup apricot preserves
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the fresh lemon juice, olive oil, minced garlic, mixed herbs, salt, and black pepper.
  2. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).
  4. Grill the Chicken: Remove the chicken from the marinade and let any excess marinade drip off. Place the chicken breasts on the grill and grill for about 6-7 minutes on one side.
  5. Flip and Glaze: Turn the chicken breasts over and brush the tops with apricot preserves. Grill for an additional 5-7 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  7. Serve: Slice the grilled chicken and serve it warm, drizzled with any remaining apricot glaze.

Notes

  • Use chicken thighs instead of breasts for a juicier option.
  • Swap olive oil for avocado oil for a different flavor.
  • Try honey or maple syrup in place of apricot preserves for a unique glaze.
