Ingredients
- Ground chicken – 1 lb (450 g)
- Garlic – 3 cloves, minced
- Fresh oregano – 2 tablespoons, chopped (or 1 tablespoon dried oregano)
- Feta cheese – 1/2 cup, crumbled
- Breadcrumbs – 1/2 cup
- Egg – 1 large
- Lemon zest – 1 tablespoon
- Olive oil – 2 tablespoons (for cooking)
- Salt – 1 teaspoon
- Black pepper – 1/2 teaspoon
- Orzo pasta – 1 cup (about 200 g)
- Vegetable or chicken broth – 2 cups (480 ml)
- Lemon juice – 2 tablespoons
- Fresh parsley – 1/4 cup, chopped
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, crumbled feta, chopped parsley, minced garlic, egg, lemon zest, salt, and pepper. Mix until well combined. Form the mixture into small meatballs, about one inch in diameter.
- Heat olive oil in a skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally until they are golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add chicken broth and bring to a boil. Stir in the orzo and cook according to package instructions until tender, usually about 8-10 minutes.
- Once the orzo is cooked, return the meatballs to the skillet. Stir gently to combine everything. Let it simmer for a few minutes to allow the flavors to meld. Serve warm, garnished with additional parsley and lemon wedges.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- To reheat, warm in the microwave or on the stovetop until heated through.
- For freezing, place the meatballs and orzo in a freezer-safe container; they can be frozen for up to three months.
