Description

Garlic Parmesan Chicken Bites with Hot Cajun Alfredo Crispy Spinach is a delightful dish that combines rich flavors and satisfying textures. The tender chicken bites are coated in a savory garlic and Parmesan crust, paired with a creamy, spicy Cajun Alfredo sauce and crispy spinach.

Ingredients

Scale
  • 500 grams (1 lb) chicken breast, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 100 grams (1 cup) grated Parmesan cheese
  • 100 grams (1 cup) breadcrumbs
  • 2 teaspoons Cajun seasoning
  • 240 ml (1 cup) heavy cream
  • 100 grams (3.5 oz) fresh spinach
  • 30 ml (2 tablespoons) olive oil
  • Salt and black pepper to taste

Instructions

  1. Marinate the chicken pieces in a mixing bowl with minced garlic, Cajun seasoning, salt, and black pepper for 15-20 minutes.
  2. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  3. Combine breadcrumbs and grated Parmesan cheese in a shallow dish. Coat each marinated chicken piece in the mixture and place on the baking sheet.
  4. Drizzle olive oil over the chicken bites and bake for 20-25 minutes until golden brown, turning halfway through.
  5. Heat heavy cream in a saucepan over medium heat, add Cajun seasoning, and simmer for about 5 minutes until slightly thickened.
  6. Sauté fresh spinach in a skillet with olive oil until wilted, about 2-3 minutes, and season with salt and pepper.
  7. Remove chicken from the oven, drizzle with Cajun Alfredo sauce, and arrange crispy spinach around the chicken bites.

Notes

  • For a lighter option, use chicken thighs instead of breasts.
  • Swap heavy cream for a dairy-free alternative like coconut cream.
  • Use gluten-free breadcrumbs for a gluten-free version.
  • For a milder flavor, reduce the Cajun seasoning to taste.
