Description
Deliciously easy frozen vanilla bean peach sandwiches, perfect for hot summer days or any time you crave something sweet and fruity.
Ingredients
- Fresh peaches – 4 medium, ripe
- Vanilla bean ice cream – 2 cups (or more, depending on preference)
- Graham cracker crumbs – 1 cup
- Honey – 1/4 cup (for drizzling)
- Fresh mint leaves – a handful (for garnish)
Instructions
- Wash the peaches thoroughly and slice them into thin rounds, removing the pits. Set aside.
- In a bowl, combine the graham cracker crumbs with a tablespoon of honey to help bind the crumbs. Mix well until the crumbs are evenly coated.
- Take one peach slice and place a generous scoop of vanilla bean ice cream on top. Gently press another peach slice on top of the ice cream to create a sandwich. Repeat this process until all peach slices are used.
- Roll the edges of each peach sandwich in the graham cracker crumbs, ensuring they are well-coated for a deliciously crunchy exterior.
- Place the assembled sandwiches on a baking sheet lined with parchment paper. Freeze for at least 1-2 hours, or until the ice cream is firm.
- Once frozen, remove the sandwiches from the freezer. Drizzle with honey and garnish with fresh mint leaves for a pop of color and flavor. Serve immediately for a refreshing treat on a warm day.
Notes
- Store any leftover sandwiches in an airtight container in the freezer.
- These sandwiches are best enjoyed frozen. If they soften, place them back in the freezer for a short time to regain their firmness.
