Ingredients
Scale
- 2 cups Greek yogurt (plain or vanilla)
- 1 cup fresh pineapple, diced (about 1 small pineapple)
- 1 cup coconut milk (canned or carton)
- 1/4 cup honey (adjust to taste)
- 2 tablespoons lime juice (freshly squeezed)
- 1/2 cup shredded coconut (unsweetened or sweetened, as preferred)
- Pinch of salt (to taste)
Instructions
- Prepare the pineapple by peeling, coring, and dicing it into small pieces.
- Blend the diced pineapple in a blender or food processor until smooth.
- In a large mixing bowl, combine Greek yogurt, coconut milk, honey, lime juice, and a pinch of salt. Whisk until smooth.
- Pour half of the yogurt mixture into a separate bowl. Add the blended pineapple to the remaining half and mix well.
- Line a 9×5 inch loaf pan or silicone mold with parchment paper.
- Pour the plain yogurt mixture into the bottom of the prepared pan, then pour the pineapple yogurt mixture on top.
- Sprinkle shredded coconut over the top layer.
- Cover with plastic wrap and freeze for at least 4-6 hours until firm.
- Remove from the mold and slice into bars or squares.
- Serve immediately or store leftovers in an airtight container in the freezer.
Notes
- For a dairy-free option, use plant-based yogurt.
- Maple syrup or agave nectar can replace honey for a vegan alternative.
- Use canned pineapple in juice if fresh is unavailable.
- Consider adding other fruits or spices for variations.
