Description
A delightful treat combining creamy yogurt, rich peanut butter, and fresh berries, perfect for hot days.
Ingredients
Scale
- 2 cups Greek yogurt
- 1/2 cup creamy peanut butter
- 2 tablespoons honey (or to taste)
- 1 cup mixed berries (strawberries, blueberries, raspberries, chopped if large)
- 1/4 cup chopped nuts (such as almonds, walnuts, or pecans)
Instructions
- Line a baking sheet (approximately 9×13 inches) with parchment paper.
- In a medium bowl, combine the Greek yogurt and honey. Stir until well blended and smooth.
- Pour the yogurt mixture onto the prepared baking sheet and spread it evenly into a rectangle about 1/2 inch thick.
- Warm the creamy peanut butter in a small microwave-safe bowl for about 15-20 seconds, then swirl it over the yogurt layer.
- Evenly distribute the mixed berries over the yogurt and peanut butter layer, then sprinkle the chopped nuts on top.
- Place the baking sheet in the freezer and freeze for at least 4 hours, or until the yogurt is completely firm.
- Remove the yogurt bark from the baking sheet using the parchment paper overhang and cut into squares or rectangles.
- Enjoy immediately or store in an airtight container in the freezer for up to 2 weeks.
Notes
- For nut-free options, use almond butter or sunflower seed butter instead of peanut butter.
- For a vegan version, replace honey with maple syrup and use dairy-free yogurt.
- Experiment with different fruits like bananas or mangoes for variety.
