Description
A refreshing and healthy snack made with dragon fruit and coconut, perfect for hot days or post-workout.
Ingredients
Scale
- 1 medium-sized dragon fruit (about 300 grams)
- 1 cup coconut milk (canned or carton)
- 1 cup shredded coconut (unsweetened)
- 2 tablespoons honey (or maple syrup for a vegan option)
- 2 tablespoons lime juice (freshly squeezed)
- A pinch of salt
Instructions
- Slice the dragon fruit in half and scoop out the flesh using a spoon. Discard the skin and place the flesh in a blender or food processor.
- Add the coconut milk, honey, lime juice, and a pinch of salt to the blender with the dragon fruit. Blend until smooth and well combined.
- Pour the blended mixture into a mixing bowl and fold in the shredded coconut.
- Line a small square or rectangular baking dish with parchment paper. Pour the dragon fruit and coconut mixture into the dish, spreading it evenly.
- Place the dish in the freezer for at least 4 hours or until the mixture is completely solid.
- Once frozen, remove the dish from the freezer and cut into bite-sized cubes.
- Roll each cube in additional shredded coconut to coat the outside.
- Enjoy immediately or store in an airtight container in the freezer for up to 2 weeks.
Notes
- For a vegan option, replace honey with maple syrup.
- Store in an airtight container in the freezer, separating layers with parchment paper.
- Let sit at room temperature for a few minutes before serving if too hard.
