Description
Fresh Vegetable Tortilla Roll Ups are a delightful treat packed with fresh veggies, making them healthy and tasty. Perfect for parties, picnics, or a light lunch.
Ingredients
Scale
- 4 large flour tortillas
- 8 oz cream cheese, softened
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 2 cups fresh spinach, washed and dried
- 1/4 cup fresh herbs (such as dill, parsley, or cilantro), chopped
- Salt, to taste
- Pepper, to taste
Instructions
- In a medium bowl, mix the softened cream cheese with a pinch of salt and pepper. Optionally, add chopped fresh herbs.
- Place each flour tortilla on a clean, flat surface. If cold, warm them slightly in the microwave for about 10 seconds.
- Evenly spread a generous layer of the cream cheese mixture over each tortilla, leaving about half an inch around the edges.
- Layer the fresh spinach, followed by the sliced bell peppers, cucumber, and julienned carrot on top of the cream cheese.
- Starting from one edge, carefully roll the tortilla tightly, ensuring the filling stays inside. Repeat for the remaining tortillas.
- Using a sharp knife, slice each rolled tortilla into 1-inch thick pieces.
- Place the sliced roll-ups on a serving dish and garnish with additional fresh herbs or a sprinkle of salt and pepper.
Notes
- Store in an airtight container in the refrigerator for up to three days.
- These roll-ups are best enjoyed cold; reheating is not necessary.
- For a vegan option, replace cream cheese with a plant-based alternative.
- For gluten-free, use gluten-free tortillas.
